Ask my wife, I LOVE food. I love to eat food, I love to cook food, I just love a great meal. Every season has it’s go-to foods. Easter has ham, Thanksgiving has turkey, Christmas ham, maybe prime rib. In the fall and winter we go to “comfort food”. What about summer? What is your favorite summertime meal? There are so many great things that are just better in the summer. Especially here in the valley and Western Colorado. Whether it be the awesome local produce that we’re blessed with, Peaches from Palisade or Olathe Sweet corn there are somethings that make summer the best time for eating. Odds are it includes the grill and eating outside. At the Sheldon household we run the grill pretty much year round, but during the summer the grill goes into overdrive. There is something rustic and right about food on a fire. The food just tastes better. My favorite summer meal is pretty simple. Chicken on the grill, seasoned with a little garlic salt and celery salt, Olathe Sweet corn, a red leaf wilted salad and a glass of iced tea. That to me is heaven and the perfect summer meal. Now you open the debate with charcoal, gas or the newest wood pellet smokers. (I love my Traeger) Summer also gives us an opportunity to break out the ice cream maker. Our family has a secret homemade ice cream recipe that we’ve used since my mom found it in ’57. We call it cinnamon ice cream. Made with red hots and a whole lot of awesome! We will blow through a gallon of that in days. I don’t know anyone yet who has tried it and not loved it. What is your favorite summer meal? If you want to share feel free to send me an email.
