Muffins:
- 3 cups of peaches, peeled and cubed
- 2 cups flour
- 3/4 cup sugar
- 2 large eggs
- 1/3 cup yogurt (plain, vanilla, or peach)
- 1/3 cup vegetable oil
- 1 1/2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
Crumble Topping:
- 1/4 cup all purpose flour
- 1/4 cup sugar (Brown or white works)
- 1 tsp cinnamon
- 1/4 cup cold butter
Directions:

For the muffins: Preheat your oven to 375

Add the flour, sugar, baking powder, baking soda, cinnamon, and salt to a large bowl and stir.

In a separate bowl, mix 2 cups of the peaches, eggs, yogurt, and oil. Add to dry mixture and mix well.

Pour batter into muffin tins, filling them about 3/4 up.

Top the muffins with the rest of the cubed peaches and add a spoonful of the crumble topping over the peaches. (For the crumble topping: Combine the flour, sugar and cinnamon in a small bowl. Add the cold butter and mix until crumbly.)

Bake for 20 minutes or until golden brown and enjoy!
