This is a pretty bold statement… But this is my favorite Instant Pot recipe!! It’s sooo good! And it’s one of those recipes that gives you meals for a week, and you don’t get tired of the leftovers! Hope you enjoy!
Ingredients
- 1 pound sausage (Any style, cut into small pieces)
- 1 pound chicken (cut into cubes)
- 2 tablespoons olive oil
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 1 cup celery
- 3 cloves garlic
- 1/3 cup flour
- 1/3 cup butter
- 3 cups chicken broth
- 2 teaspoons Creole seasoning
- 10 ounces diced tomatoes with green chiles
- 14 ounces fire roasted diced tomatoes
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon black pepper
- Rice or Quinoa
Instructions
Mince the garlic and dice the bell peppers, onion, and celery.
Set Instant Pot to “Saute” function and add olive oil, garlic, peppers, onion, celery, and sausage. Saute until vegetables become soft (normally about 4 minutes.) Remove all vegetables and sausage. Set aside.
Immediately add butter to instant pot and stir. When butter is melted, add flour. Cook 5 minutes, stirring constantly until dark brown.
Add ALL ingredients and seasonings to the instant pot (Except rice or quinoa.) Close and lock the lid of the Instant Pot. Press “Manual” and select “High Pressure.” Set time to 20 minutes. When time is up, turn your instant pot off and Quick release.
Serve over rice or quinoa and enjoy!!
