I love this recipe because you do everything in one pot, and it only takes 30 minutes. Perfect for a quick meal after work on a ‘chili’ night! 😉
Ingredients:
- 1 yellow onion
- 1 pound ground beef (add 1/2 pound extra if you like it chunkier)
- 1 can beef broth (about 2 cups)
- 3 tablespoons tomato paste
- 1 can petite diced tomatoes. (15 oz)
- 1 can tomato sauce (8 oz)
- 2 cans of red kidney beans (16 oz)
- 1 tablespoon olive oil
- 2 1/2 tablespoons chili powder
- 2 1/2 tablespoons cumin
- 2 tablespoons sugar
- 2 tablespoon garlic powder
- 1 teaspoons salt
- 1/2 teaspoon pepper
- Favorite chili toppings (Optional)

Add the olive oil to a large pot and place it over medium-high heat for a few minutes. Add the diced onion and cook for 5 minutes, stirring occasionally.

Add the ground beef to the pot and cook until the beef is browned.

Add the broth, diced tomatoes (with their juice), drained beans, tomato sauce. chili powder, cumin, sugar, tomato paste, garlic powder, salt, and pepper. Stir until well combined.

Bring the chili to a boil and then reduce the heat to gently simmer the chili for 20 minutes. Stir occasionally.

Remove the pot from the heat and let the chili thicken for 5-10 minutes before serving.
